Things we enjoyed:

Copan Ruinas – decent ruins to visit, with tunnels to explore
La Ceiba – not a very nice town, but you can park your bike here if you want to visit the islands
Roatan – great diving, but not much else
Utila – reputation for being cheaper than Roatan (we didn’t visit)
